Once-a-month cooking

The last two days, I did something I haven’t done for a few years, which is once-a-month cooking. This technique has one frenetically picking out recipes, ingredients, and batch cooking several recipes at once. In a tiny RV kitchen this is challenging, but the way the fridge and freezer fill up with future meals is really satisfying.

Done correctly, this method saves a small fortune, but you can mess it up by going to the store for some milk and coming back laden with snacks and canned “extras.” I didn’t bother with chilli this time because we still have so many cans of “hot” chilli in the closet. ;)

Over the last couple of months I’ve found that we were relying on canned and boxed goods, and I don’t want to do that any more. Once in a while it’s nice to have mac-and-cheese, but when I home cook I know what’s in the recipe (well, more or less, for the ground beef ones. ;) Right now I’m a tad embarrassed to say that it doesn’t all fit in the freezer, but if we cook a pot pie tonight that’ll help and if I sic Don on the freezer I know he’ll *make* it fit. It’s this skill he has…one of many. :)

We are still waiting for our satellite equipment to arrive. I’m actually contemplating going up to Weaverville where there is cell service, and calling to ask, make sure there are no problems. I’m glad of the offline time. It has given me a distraction-free period to do the cooking and explore a little. There are hiking trails close by and it’s going to be very easy for me to get my daily mile or two in. This whole area is surrounded by public lands oozing with trails and opportunities for writing and photography. :)
